This trending 120 seater Sophisticated Dining Restaurant ; Members Lounge and Cocktail Bar in Sandton offers a unique mix of fine dining South African & European cuisine with a young and upbeat vibe, innovative cocktails, luxury seating and stunning views from floor to ceiling glass paneled windows. ProStaffSelect are in search of a PASTRY CHEF with good all round pastry, baking and dessert skills to handle and oversee daily dessert production for hot and cold plated desserts with multiple garnish components. This is a high-pressure / high-volume restaurant where menu specials are introduced once per month with complete menu changes every 3 - 4 months. REQUIREMENTS: Focused pastry qualification At least 3 - 4 years’ experience within senior DESSERT Fine Dining / 5* a la carte operations Advanced Dessert Techniques needed for detailed plating components and INNOVATIVE plating concepts Must have a strong personality and perseverance in working long & demanding shifts Strengths in delegating and leading a junior Pastry Team (2 Junior CDP's & 1 Trainee) Must be innovative and confident in creating new desserts, costings, managing food cost and GP’s for the section Please include at least 5 photos of your recent plated pastry work / desserts only (no function menus please)
